New Owners of Hawker Bros. Butcher in Maryland Street, Stanthorpe are eager to tell people that in terms of service and product, there will be no changes to the currently successful butchery.
Wade and his wife Laura, purchased the business last January from Mal Newly whom has been in the business for over 20 years, making Wade and Laura the 4th owners of Hawker Bros and Wade the oldest apprentice that Hawker Bros. has ever had, the shop has an interesting history and the new owners wish to continue with the tradition. Wade has expressed a desire to keep products local by sorcing sheep and cattle for the shop from the Stanthorpe district.
Wade and Laura live with their two children on their catle property "Granite Hill" out at Eukey. Laura's family were sheep producers from the Traprock and Wade's family owned a smaller property in the Eukey district for over 25 years and now host a luxurious self contained 2 bedroom loft cottage on Storm King Dam. Both Wade and Laura have settle back into the area for around 6yrs and have set about establishing a Brangus Stud, from which the first calves were produced last year.
Hawker Bros Butcher is well known in the area for it's old style of smoking with the ever so tasty Traditional Leg Ham, Bacon and Whole Chickens, we have many returning customers from out of town for these aswell as our Italian Sausages. The Smoke House certainly can be smelt around town in peak smoking season (around xmas) drawing in the public for a tasting.
In the first year of trading we have seen a few more openings for promoting our products - seeing us head up to the Brisbane Southbank Markets with Granite Belt Wine and Tourism setting up a stall and displaying and tastings of our small goods products of Italian Sausages, Salami's, Smokey Bacon and Kabana's - these proved to be quite a hit selling out of stock within the first 2 hours of opening. Hawker Bros. also held a stall at the once a month "Market in the Mountain" here in Stanthorpe and participating in the Nude Food Trail - food tourist promotions.
Hawker Bros still focus on providing the traditional cuts and family style of butchering with private kills still available and being dealt with efficiently, promply and professionally. Above all else the emphasis is the new ownership of Hawker Bros Butcher is the keeping of 40 years of tradition.
